Ume syrup is finally ready.
After 4 weeks waiting with patience and expectations, I have harvested my Ume syrup.
It may ferment a little, so don’t worry if you have a little foam. Pick the plums out of the jar, remove the foam and boil the syrup for couple of minutes. It will enable it to store for 3 months at room temperature. Without the boiling procedure, it can be stored in your refrigerator preferably to be consumed within a month.

How to use Ume syrup
・Dilute it with cold water, or carbonated water to make an Ume juice.
・Dilute it with icy Jasmin tea with a sprig of mint as garnish.
・Ume Shaved ice
・Ume dressing for a salad
・Cocktails
・Add to a plain yogurt
I am sure there are a lot more recipes for drinks, foods…you can be creative on all sorts of ideas. Summer can be harsh in Japan with high temperature and high humidity. Hope Ume syrup will bring you an aromatic breath of air, dispel the hotness and thirst-quenching.
